Recipe: Grilled Prosciutto-Wrapped Asparagus

I was looking on the Food Porn Daily website and found this recipe. I have had a thing for asparagus lately, so I am definately going to have to try this out!!

[Serves 4]

24 medium asparagus spears, snapped

8 sheet very thinly sliced prosciutto, cut in thirds lengthwise

1 large garlic clove

1/3 cup balsamic vinegar

2 tablespoons Dijon mustard

1/4 teaspoon each Kosher salt and black pepper

1/2 cup extra-virgin olive oil, plus extra for drizzling

Make vinaigrette by whisking garlic, vinegar, mustard, and salt and pepper in a 2-cup Pyrex measuring cup. Slowly whisk in oil until you reach the 1-cup mark.

Drizzle asparagus with olive oil and sprinkle with salt and pepper.

Working one spear at a time, roll each one in a piece of prosciutto.

Grill over direct heat on a charcoal or gas grill turning them only once until prosciutto is crisp and the asparagus are crisp-tender, 5 to 6 minutes.

Arrange spears on each plate and drizzle with balsamic vinegar or vinaigrette. Serve immediately.

What's the Rush?!

Today on the way home from my best friends, my mom asked me if I ever planned on settling down and getting married. It kind of blew my mind, I am only 21. Before I ever think of 'settling down' I plan on seeing the world with my friends and experience as much as possible. I want nothing holding me back from my dreams. So for now the only wedding I will be planning is my mama's.

Talkin' That Blah Blah Blah!

So I have been on the hunt for a job since I've been home. So far I am still unsuccessful, and it's so discouraging. I had a job at Sears, less than a week after I got back. I thought it went good, and I have good experience for the position. over 2 weeks later, after I made a follow-up call I got a letter thanking me for my interest but they are unable to hire me at this time.. BLAAH!
Last week I had an interview with a photography interview, between me and 1 other person. They were making a next day call back to hire someone right away. Another amazing job oportunity, and in photography! ..It's now early tuesday morning and I didn't get a call.. Hoo-Humm!! I'm keeping my fingers crossed, hopefully something, aaanything will come up soon. I don't wanna do chores around the house for "martini money" haha

About half way through season 3 of LOST with Marty and Michelle! So addicting! AAND! Half-way through Breaking Dawn. I'm not obsessed with twilight, but they are pretty good books, I got through them so fast because I couldn't put them down (epsecially Eclipse and Breaking Dawn, because I didn't know about the story..)

Spending as much time with my Best Friend, Janys!

I realized I haven't really been active on hear lately, so I am catching up! Enjoy :)

Fantastic Mr. Fox

So I'm pretty sure I thought this movie was going to be so stupid. I was proven wrong about 5-10 minutes in. It is absolutely rediculous but soo effin' funny! The Movie has voices from George Clooney, Meryl Streep, Bill Murray and Owen Wilson. (obviously more, but those are the ones I know) It's based on the book the Fantastic Mr. Fox by Roald Dahl (The BFG!!)
The movie is about Mr. Fox (GC) and his wild-ways of hen-heckling-turkey-taking-cider-sipping-nocturnal-instinctive adventures. After promising his wife (MS) that his stealing days are over, because she is pregnant, he secretly sets up "one last raid" on the three nastiest, meanest farmers - Boggis, Bunce and Bean.

Just One of Those Days

I hate when you have a blah night and it leads into a blah day.

I could have stayed in bed all day, staring into space and thinking.
